Welcome to the Dominican Republic Cuisine Center, here I'll be posting some recipes of traditional dishes, and I hope you dare to try them sometime. If you have any question about ingredients or anything, don't hesitate to ask.


Pollo Guisado (Braised Chicken)

Ingredients

  • 2lbs of chicken cut into small pieces
  • 2 limes cut into halves
  • 2 green bell peppers
  • 1/2 cup of chopped celery (optional)
  • 1 small red onion chopped into fine strips or eighths
  • 4 plum tomatoes cut into quarters
  • 2 tablespoons of oil
  • 1/4 cup of seedless olives cut into halves (optional)
  • 2 tablespoons of tomato paste or 1 cup of tomato sauce
  • 1/2 teaspoon of mashed garlick
  • 1 teaspoon of sugar
  • A pinch of oregano
  • A small bunch of fresh coriander leaves
  • Salt





Instructions

  1. Cut the chicken in small pieces.
  2. Wash the chicken with warm water and scrub with the lemon getting lemon juice into all the crevices
  3. In a bowl mix the chicken, oregano, onion, celery, tomatoes, a pinch of salt and garlic. Marinate for 30 minutes.
  4. In a pot heat the oil over medium heat, add the sugar and wait until the sugar browns.
  5. Add the chicken (reserve vegetables and herbs) and sauté until the meat is light brown
  6. Add 2 tablespoons of water. Cover and simmer over medium heat for 15 minutes adding water by the tablespoons when necessary.
  7. Add onion, celery, tomatoes, peppers, olives, a pinch of salt and garlic, cover and simmer until the vegetables are cooked through, adding water if necessary.
  8. Add the tomato sauce and half a cup of water, simmer over low heat to produce a light sauce. Add the fresh cilantro.
  9. Season with salt and pepper to taste.
  10. Serve with white rice and beans (or any other side dish)

Yes!! and since you asked, for our second recipe I'll show you one of my favorite traditional desserts!!!

Ingredients

  • 3 cups of evaporated milk
  • 5 cups of water
  • 1 cup of sugar
  • 1 cup of long-grain rice
  • 4 cinnamon sticks
  • 1/4 cup of raisins
  • 2 tablespoons of butter
  • 1 teaspoon of salt
  • 1 teaspoon of cloves
  • 1/8 teaspoon of ground nutmeg


Instructions

  1. Soak the rice, cloves and cinnamon sticks in 2 cups of water and let sit for a couple of hours. (Optional)
  2. Put the remainin 4 cups of water in an iron or cast aluminum pot
  3. Add the rice (including the water in which it was soaking, cinnamon and cloves)
  4. Add the salt
  5. Cook over medium heat and stir regularly to avoid sticking
  6. When the rice is tender (about 20 mins) add the milk and the sugar
  7. When it breaks a boil again add the raisins
  8. Cook over low heat until the mixture reaches a pudding-like consistency
  9. Remove from the heat
  10. Remove the cloves and cinnamon sticks
  11. Add the butter and mix well
  12. Cover and let it cool down to room temperature
  13. Stir to incorporate the crust that forms during cooling
  14. Serve in small bowls and sprinkle with the nutmeg
