| Rocky Mountain Oysters: Start with the gross one first..my opinion)This is what they look like cooked: But this is how they really look:Yep, you guys are looking at one of the most or close to most unique for to come out of Colorado, Rocky Mountain Oysters..or Buffalo Testicles..yep...people in Colorado eat these (I never have if your curious) (Quoting Wikipedia on the subject and they say)"Rocky Mountain oysters, also known as prairie oysters in Canada, is a dish made of bull, pig or sheep testicles."Also... "The primary goal of testicle removal is not culinary. Castration in veterinary practice and animal husbandry is common and serves a variety of purposes, including the control of breeding, the growth of skeletal muscle suitable for beef, and temperament alteration"So really one of the most popular food in Colorado has two uses..food for people and helping other animals.. Green Chile/Chile Verde (and hamburgers too):This is a colorado Green chile recipe: (Credit goes to: Denver Post)Doesn't that look yummy? dang right it is!! Lots of Colorado folks love making this or a variation of it to use with chips, put on burritos or other foods. link Hamburgers... (Great now I'M Hungry) Here is a basic Green chile recipe for you to try if you wish:(Credit goes to the Denver Post)Denver Post Pork Green ChileThis recipe from the late Denver Post food editor Helen Dollaghan is one of the most-requested from The Denver Post archives. Serves 6.Ingredients1 pound diced pork (whichever cut you like — shoulder, chops, loin)1/4 cup cooking oil1 tablespoon ground cumin1 1/2 tablespoons dark chile powder1 1/2 tablespoons dried oregano1 tablespoon garlic powder or 2 cloves garlic, crushed1 medium onion, diced3 cans (10 ounces each) chicken broth1 can (32 ounces) whole tomatoes1 tablespoon tomato paste3-4 fresh roasted green chiles or 1 can (8 ounces) diced green chiles3-5 jalapeño peppers, diced with seeds (remove seeds to bring down the heat factor)TortillasShredded cheeseDirectionsBrown pork on all sides in oil over medium high heat. Add cumin, chile powder, oregano, garlic powder, onion and broth.Bring to boil, reduce heat and simmer, covered, 1 hour. Crush tomatoes with potato masher in another pan. To tomatoes and their juice, add tomato paste, green chiles and jalapeños. Combine tomato and pork mixtures.Bring to boil, reduce heat and simmer 2 hours (or place in a slow cooker up to 8 hours), until pork is very tender. Colorado is famous for is selection of Beers, wines and spirits. One famous place to get them is LoDo in Downtown Denver. Now obviously I am only saying go to these places if your old enough to drink.

| I think that doughnut burger would be a bit much for me, XD but I'd totally try the Helton burger! Yum!
